Chicken Thighs in Tomato Puree

Today I decided to do something different: I cut my chicken thighs in very small pieces, fried them up with some onions and garlic (and spices) in coconut oil and then added some tomato puree. To finish it off, I added some cheese to melt through it. I served it with glass noodles and added some ham after it cooled down just a little bit, because my stomach doesn’t appreciate E250 when it has been heated. I think it tasted great and I’ll be sure to make it again!
